Preparation time : 10 Min

Cooking Time : 1 hour 20 minutes ( without Pressure Cooker)


1)600 – 700 Grams Mutton / Lamb

2) 4 Tblspn Ghee

3) 2-3 Black Cardamom

4) 7-8 strings of Saffron

5) 3-4 Green Cardamons

6)Little bit of Mace ( Javitri)

7)2 inch Cinnamon Sticks

8)1&1/2 Tspn Cumin seeds

9)2 Tspn Kashmiri Red Chilli Powder ( Most Important ingredient)

10)2 Tspn Ginger Paste / Ginger Powder

11)1 Tspn Fennel Seed Powder

12)1 big pinch / 1/2 Tspn – Hing (Asafoetida) Powder

13)Hot Water

14)Salt as per Taste

15) 1 Tspn Sugar

Method Of Cooking

Step -1

Make a dry powder of Green cardamon, Mace, Cinnamon and Cumin seeds, by grinding them in a mixer grinder. Keep them aside

Step – 2

Take a Bowl and mix Kashmiri Red chilli Powder, Ginger Powder, Fennel seed Powder and Hing Powder together with 2-3 table spoon of water. Make a smooth paste and keep it aside

Step -3

Heat the Ghee in a pan / kadhai / yok. Add the black Cardamon and Saute Now add the Mutton / Lamb and fry until it turns a little brownish in color. Add the Sugar and roast the mutton until it gets caramelized

Step -4

Add the wet spice mixture paste / masala paste and mix it well with the mutton. Now add the saffron. Mix it well with the mutton and then add a glass of hot water and salt Cover and cook for 45 – 1 hour. ( You can also pressure cook it at this stage to reduce the cooking time)

Step – 5

Open the Lid after 45 minutes to find a nice gravy formed and mutton / lamb softer or tender in texture. Add the dry spice mixture now and mix it well. Cover and cook for 20 -30 minutes more. ( if required add a little more hot water to bring the correct consistency)
