Mutton Do Pyaza / Lamb Do Piyaza

Cooking Method

Preparation time -5 mins

Cooking time -20-25 mins

Ingredients :

450 gms of Mutton or Lamb

Onion paste -1 medium size

Chopped onion -1-2 medium size

Ginger – Garlic Paste -2 tspn

Deshi Ghee -4 tblspn

Garam Masala -1 tspn

Salt and sugar according to taste

Fresh cream – according to taste

Whole Spices a) Corriander seed – 1tspn

b) Cumin seed -1 tspn

c) Black Pepper – 1 tspn

d) Red Chillies -3

e) Black Cardamom -1

f) Green Cardamom -2-3

g)Bay Leaves -2

h) Cinnamon Stick -1 inch

Method Of Cooking

Step 1

Crush the whole Spices together and add it to the mutton. Add half the onion paste,half the ginger-garlic paste,a little salt and sugar and mix very well. Add half a cup of water and pressure cook the mutton.

Step -2

Heat the ghee in a kadhai and add the chopped onion. Fry it until golden brown in colour. Take out half of the fried onion from the kadhai and keep it aside. Now add the leftover ginger garlic paste and onion paste and cook.


Add the pressure cooked mutton and mix well. Add the curd and stir . Add salt and sugar as per requirement. Roast the mutton untill the ghee separates from the edges. Add half a cup of hot water (optional). Garnish it with the fried onion and fresh cream . Serve it with rice,roti,paratha or kulcha.
